Many years ago, my old boss had me preparing for her annual Hannukah party. Although I was responsible for keeping her and her kids fed, there were some traditional recipes she never shared with me ~ how to make chicken soup or latkes. Finally one year she handed me a recipe and asked me to make latkes for 35 guests ~ a LOT of work! Here is the recipe. Enjoy!
*10 pounds white potatoes (finely processed like applesauce consistency) *1 huge sweet onion (processed WITH the potatoes)
*6 large eggs (beaten) *about 1/2 cup of Matzoh meal or flour (ONLY use if batter is watery)
*Mix all ingredients in a large non-metalic bowl (metal makes the potatoes turn dark faster) *Stir in matzoh mean or flour IF the potato mixture is too watery or runny…the mixture should almost be like a nice thick applesauce consistency *Heat about an inch of canola or other vegetable oil in a HOT (very hot) fry pan or skillet.
*Put a heaping serving spoon size amount of mixture into the hot oil (you can usually fit five or six spoonfuls in a single large (12 inch) skillet/fry pan) and flatten out as it starts to fry.
*10 pounds of potatoes makes approximately 90 ~ 100 latkes, and if you eat them as a main course (which you can do if you have salad on the side) this will feed 10 -12 people. OMGOSH they are sooooo fine!
I was soon learning quotes not nearly as enticing as a delicious recipe ~ oh, the Latkes were marvelous! Anyhow, I am including some paintings of Jew in European history.
