This is a photo from the feast another side of the family had for Christmas ~ traditional Philippine lechon or roasted pig. My Grandson gets to enjoy both Philippine and Danish traditions as he grows up, all combined with my French Canadian heritage.

ReplyDeleteIberico Pork from Spain is the best, the highest quality pork you can buy, not that suckling pig, which I had a couple of Christmases ago at my first cousin's house. I bought the Iberico off Frank Tufano, the carnivore you tube guy, real good quality stuff.

but the regular bellota presa is the one I ate during the holidays. It's expensive but fully worth it on special occasions, not any more expensive than eating at some mediocre restaurant where they overcook and destroy most of their foods. Everyone I fed it to, loved it, including my 84 year old mom, who usually doesn't eat Pork or Beef, only chicken and fish. She lapped it up and even asked for seconds. lol It's the best meat of any kind I've ever had in my whole life, including stuff I ate once or twice in real expensive 60 dollar a plate steakhousese .
Use a cast-iron pan for best results. Soak it in Coconut Aminos and Red Boat sauce (can get both from amazon) and some lemon juice. Sear it on side for 30 seconds only, turn the heat off and flip it over while the pan is cooling off. Serve as soon as you can eat it without burning your mouth which is in about 2 minutes.
The woman at the 32 minute mark of the following video is a 70 year old great-grand-mother who only went on the carnivore diet 6 months before this video was made. Her husband is also over 70 and after 6 months now has a FLAT STOMACH for the first time in 30-plus years! No changes except his diet. The daughter at 50 doing 15 pullups (Yes, 15 friggin' pullups and she's a girl, wait till you see the son at the end who's a regular gymnast) is already a grandmother.

Grass-Fed/Grass-Finished beef fat you can get for 4.45 an entire pound. Only the fat. You just have to ask the butcher to save it for you. That same meat in a fatty Rib-Eye cut which would give you less overall vitamins since it has less fat would be over 17 dollars a pound. Fat is where all the vitamins are stored and it will never make you fat in the absence of sugars and breads and carbs. Very easy to eat even raw, tastes like jerky butter. Of course, if you sear it one side with a little seasoning it's absolutely delicious if a a slight bit less totally healthy.
